Smoky Tapioca Stir Fry
A quick and easy stir fry made with smoky flavor and tapioca, perfect for a snack or lunch.
Ingredients
- β1 block Smoky tofuCubed
- β1 cup Tapioca pearlsCooked according to package
- β2 tablespoons Vegetable oil
- β1 cup OnionThinly sliced
- β1 cup Bell pepperThinly sliced
- β2 cloves GarlicMinced
- β2 tablespoons Soy sauce
- β1 tablespoon Honey
- β1 tablespoon Sesame oil

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the onion and bell pepper and stir-fry for 3-4 minutes, or until they begin to soften.

Add the garlic and stir-fry for 1 minute.

Add the cooked tapioca pearls and stir-fry for 2-3 minutes, or until they are well coated with the vegetables and oil.

Add the cubed smoky tofu and stir-fry for 1-2 minutes, or until it is well coated with the vegetables and oil.

In a small bowl, whisk together the soy sauce, honey, and sesame oil.

Pour the sauce over the tofu and vegetables and stir-fry for 1-2 minutes, or until the sauce is bubbly and slightly thickened.

Serve hot and garnish with sesame seeds and chopped green onions, if desired.
