Grilled Smoky Thai Chicken
A flavorful and aromatic dish featuring smoky chicken, peas, and a thai-inspired marinade.
Ingredients
- β1 1/2 pounds Boneless, skinless chicken breastsCut into 1-inch pieces
- β1/2 cup Smoky Thai marinadesee notes
- β1 cup Fresh peas
- β Grill
- β2 tablespoons Coconut oil
- β2 teaspoons Thai red curry paste
- β1 tablespoon Fish sauce
- β1 tablespoon Honey
- β2 tablespoons Lime juice
- β1/4 cup Chopped cilantro

Preheat grill to medium-high heat.

In a blender or food processor, combine smoky thai marinade ingredients and blend until smooth.

In a large bowl, whisk together marinade and 2 tablespoons of coconut oil.

Add chicken to the bowl and toss to coat.

Cover and refrigerate for at least 30 minutes or up to 2 hours.

Thread peas onto skewers.

Grill chicken and peas for 8-10 minutes or until chicken is cooked through.

In a small bowl, whisk together thai red curry paste, fish sauce, honey, and lime juice.
