Smoked Beet Salad

Ingredients
- β2 medium beetsany color, but smoky is preferred
- β1/2 cup, crumbled goat cheesevelvety texture
- β1/4 cup, chopped fresh polish dillor substitute with regular dill
- β4 cups, mixed greens saladarugula, spinach, lettuce, etc.
- β2 tbsp olive oilfor dressing
- β1 tbsp balsamic vinegarfor dressing

Instructions

Preheat oven to 425Β°F (220Β°C).

Wrap beets in foil and roast for 45 minutes, or until tender.
