Smoky Basil Gougere Bites
A flavorful twist on the classic French gougere, infused with Thai basil and a smoky heat.
Ingredients

- ● 1/2 cup grated Gruyère cheese
- ● 1/4 cup unsalted butter
- ● 1/2 cup Thai basil leaves
- ● 1 teaspoon smoked paprika
- ● 1/2 teaspoon salt
- ● 1/4 teaspoon black pepper

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour and a pinch of salt.

Add the Gruyère cheese and mix until well combined.

Add the unsalted butter and mix until a dough forms.

On a lightly floured surface, roll out the dough to a thickness of about 1/4 inch.

Cut out small squares of dough, about 1 inch per side.

Place a few Thai basil leaves on one half of each square, leaving a 1/2 inch border around the edges.

Fold the other half of the dough over the basil and press the edges to seal.

Brush the tops with a little water and sprinkle with smoked paprika.
