Ethiopian Injera Pancakes
A twist on traditional injera, made into a delicious pancake. Serve with your favorite toppings.

Ingredients
- β2 cups, torn into small pieces Injera
- β2 tablespoons, chopped Fir fir
- β1/4 cup, melted Buttery
- β1/4 cup, chopped Snappy
- β2 Eggs
- β2 tablespoons, melted Butter
- β1/2 cup Milk
- β1 tablespoon Sugar
- β1/4 teaspoon Salt

Instructions

In a large bowl, whisk together eggs, melted butter, milk, sugar, and salt.

Add the chopped fir fir and snappy to the bowl and mix well.

Add the torn injera to the bowl and mix until well combined.

Heat a non-stick pan or griddle over medium heat.

Using a 1/4 cup measuring cup, scoop the batter onto the pan.

Cook the pancakes for 2-3 minutes, until bubbles appear on the surface.
