Uruguayan Smoked Beef Dinner
A hearty beef dinner with a smoky Uruguayan twist, slow-cooked to perfection.
Ingredients
- ●1.5 lbs Smoked Uruguayan beef brisket
- ●2 medium Dinner Earthy sweet potatoes
- ●2 tsp Hot smoked paprika
- ●2 tbsp Sole olive oil
- ●1 cup Braised red wine

Preheat oven to 300°F (150°C).

Season the beef brisket with smoked paprika, salt, and pepper.

Heat olive oil in a large Dutch oven over medium-high heat. Sear the beef until browned on all sides, about 2-3 minutes per side.

Transfer the beef to a large plate and set aside.

Add the sweet potatoes to the pot and cook until they begin to brown, about 5 minutes.

Add the red wine to the pot, scraping up any browned bits from the bottom.

Return the beef to the pot and cover with a lid.

Transfer the pot to the preheated oven and braise for 2 1/2 hours, or until the beef is tender and falls apart easily.

Remove the pot from the oven and let it cool slightly.

Slice the beef against the grain and serve with the sweet potatoes and braising liquid.
