Slovakian Bacon Roast
A hearty Slovakian-inspired roast recipe featuring crispy bacon and tender beef.
Ingredients
- β6 slices Bacon, 6 slicespreferably Slovakian bacon
- β2 lbs Slovakian roast beef, 2 lbsor substitute with similar cut
- β1 cup Sour cream, 1 cupoptional for serving
- β1 loaf Chewy bread, 1 loaffor serving with roast
- β1 tsp Caraway seeds, 1 tspoptional for added flavor
- βto taste Saltfor seasoning roast
- βto taste Black pepperfor seasoning roast
- β2 cloves Garlic, 2 clovesminced for added flavor

Preheat oven to 350Β°F (175Β°C).

Season the roast with salt, black pepper, and caraway seeds.

In a large Dutch oven, cook the bacon over medium heat until crispy.

Remove the bacon from the pot, leaving the drippings behind.

Sear the roast in the pot until browned on all sides.

Transfer the roast to the preheated oven and cook for 2 hours, or until tender.

While the roast is cooking, toast the chewy bread and set aside.

When the roast is done, let it rest for 10 minutes before slicing.

Serve the sliced roast with toasted bread, crispy bacon, and a dollop of sour cream (if desired).
