Wild Mushroom Paella
A Spanish-inspired dish featuring wild mushrooms, cooked to perfection in a savory paella.
Ingredients
- β1 cup Wild mushrooms
- β1 cup Saffron-infused paella riceavailable in most Spanish markets
- β2 tablespoons Olive oil
- β2 cloves Garlicminced
- β1 cup Onionchopped
- β1 teaspoon Smoked paprika
- β1 teaspoon Salt
- β1/2 teaspoon Black pepper
- β1/4 cup Sour cream

Heat the olive oil in a large paella pan over medium heat.

Add the minced garlic and cook for 1-2 minutes until fragrant.

Add the chopped onion and cook for 3-4 minutes until softened.

Add the wild mushrooms and cook for 5-6 minutes until tender.

Add the paella rice, smoked paprika, salt, and black pepper. Stir to combine.

Add 2 cups of water to the pan and bring to a boil.

Reduce the heat to low and simmer for 20-25 minutes until the rice is cooked.

Stir in the sour cream and cook for an additional 2-3 minutes.
