Welsh Rarebit with Crispy Onions
A classic Welsh dish made with melted cheese and a hint of rarebit served with crispy onions and a side of warm bread.

- β1 cup, grated Cheese
- β1/2 cup Milk
- β2 tablespoons Butter
- β1 large, thinly sliced Onions
- β2 tablespoons Flour
- β2 tablespoons Mirin
- β1 teaspoon Hon

Preheat the oven to 375Β°F (190Β°C).

Butter four slices of bread and place them on a baking sheet.

Melt 1 tablespoon of butter in a saucepan over medium heat.

Add the sliced onions and cook until crispy, stirring occasionally.

In a separate saucepan, melt the remaining 1 tablespoon of butter over medium heat.

Add the flour and cook for 1 minute, stirring constantly.

Slowly add the milk, whisking continuously to avoid lumps.

Bring the mixture to a simmer and cook for 2-3 minutes, until it thickens.

Stir in the grated cheese until melted and smooth.

Add the hon and mirin to the cheese sauce and stir to combine.

To assemble the Welsh rarebit, place a slice of toasted bread on a plate, then spoon the cheese sauce over the top.
