Algerian Chicken Stir Fry
A flavorful and spicy stir fry dish featuring marinated chicken, crunchy vegetables, and a tangy sauce.
Ingredients
- β500g Boneless, skinless chicken breastscut into bite-sized pieces
- β250g Mixed crunchy vegetables (carrots, bell peppers, onions)
- β2 tsp Algerian spice blend
- β1 tsp Crushed red pepper flakes
- β2 tbsp Sour apricot jam
- β2 tbsp Olive oil
- β Salt
- β Black pepper

1. In a large bowl, whisk together Algerian spice blend, crushed red pepper flakes, salt, and black pepper.

2. Add the chicken to the marinade and mix well to coat. Cover and refrigerate for at least 30 minutes.

3. Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.

4. Add the marinated chicken and cook until browned and cooked through, about 5-6 minutes. Remove from skillet and set aside.

5. In the same skillet, add the remaining 1 tablespoon of olive oil.

6. Add the mixed crunchy vegetables and cook until tender-crisp, about 4-5 minutes.

7. Stir in the sour apricot jam and cook for an additional 1-2 minutes.

8. Return the cooked chicken to the skillet and stir to combine with the vegetable mixture.

9. Cook for an additional 1-2 minutes, until the chicken is coated in the sauce.
