Stewed Plum and Tomato Delight
A sweet and tangy stew made with fresh plums and tomatoes, perfect for a cold evening.
Ingredients
- β2 cups, sliced plumsany variety, but firmer plums hold up better
- β1 can, 14 oz diced tomatoesfire-roasted or regular, your choice
- β2 tbsp, apple cider vinegar souradjust to taste
- β1 cup, cooked sweet potato densemashed or diced, your preference
- β1 cup, beef broth stewlow-sodium or homemade
- β1 cup wateradd more as needed

1. In a large pot or Dutch oven, heat 1 tablespoon of oil over medium heat.

2. Add the sliced plums and cook for 5 minutes, stirring occasionally.

3. Add the diced tomatoes, sweet potato, and beef broth. Stir well.
