Saudi Ceviche with Prawn and Avocado
A refreshing and light Saudi-inspired ceviche dish with succulent prawns and creamy avocado.
Ingredients
- β 1 pound large prawns, peeled and deveinedFresh and sustainable
- β 1 avocado, dicedRipe and creamy
- β 1/2 cup freshly squeezed lime juiceHigh-quality and 100% juice
- β 1 tablespoon extra-virgin olive oilCold-pressed and of high quality
- β 1/2 teaspoon ground cuminFreshly toasted and ground
- β 1/4 teaspoon cayenne pepperOptional and to taste
- β Salt and pepper to tasteFreshly ground and of high quality
- β 1/4 cup chopped fresh cilantroFresh and fragrant
- β 1/4 cup chopped red onionThinly sliced and of high quality

Rinse the prawns under cold water and pat them dry with paper towels.

In a large bowl, combine the prawns, lime juice, olive oil, cumin, cayenne pepper (if using), salt, and pepper.

Stir gently to combine and refrigerate for at least 30 minutes to allow the prawns to marinate.

Just before serving, stir in the chopped cilantro and red onion.

Cover and refrigerate for another 15 minutes to allow the flavors to meld.

Just before serving, stir in the diced avocado.

Serve the ceviche immediately, garnished with additional cilantro and red onion if desired.

Serve with toasted bread or crackers on the side for added crunch.
