Sous Vide Paleo Delight Corn Cakes
A paleo twist on traditional corn cakes, made with sous vide cooked corn and a hint of delight.

- β1 cup Cornsous vide cooked
- β1/2 cup Cornmeal
- β2 Eggslarge
- β1 tsp Delight
- β1/4 tsp Salt
- β1/4 tsp Black Pepper

Preheat sous vide machine to 180Β°F (82Β°C).

Cook corn in sous vide machine for 1 hour.

In a large bowl, whisk together cornmeal, eggs, delight, salt, and pepper.

Add sous vide cooked corn to the bowl and mix well.

Using a 1/4 cup measuring cup, scoop the mixture into a hot skillet greased with cooking spray.

Cook corn cakes for 3-4 minutes or until golden brown, flip and cook for an additional 2-3 minutes.
