Stuffed Sous Vide Protein Pancakes
A unique French twist on traditional protein pancakes, featuring a sous vide cooked protein center.
Ingredients
- β250g protein (chicken breast)sous vide
- β200g pancakes mixgluten-free
- β20g unsalted buttermelted
- β2 large eggsbeaten
- β100ml milkwhole
- β10g granulated sugaroptional
- β5ml vanilla extractoptional
- β10g honeyoptional
- β50g stuffed mix (e.g. cream cheese, herbs)your choice

Preheat the sous vide machine to 63Β°C (145Β°F).

Season the protein with salt and pepper. Seal in a sous vide bag and cook for 1 hour.

In a large bowl, whisk together the pancakes mix, melted butter, beaten eggs, whole milk, granulated sugar, vanilla extract, and honey (if using).

Heat a non-stick pan or griddle over medium heat. Using 1/4 cup of the batter, pour onto the pan and cook for 2-3 minutes.

Flip the pancakes and cook for an additional 1-2 minutes.

While the pancakes are cooking, prepare the stuffed mix (e.g. mix cream cheese with herbs).

Once the protein is cooked, remove it from the sous vide bag and slice into thin pieces.

To assemble the pancakes, place a cooked pancake on a plate, then top with a slice of the cooked protein, a spoonful of the stuffed mix, and another pancake on top.
