Croatian Fettuccine Stir Fry
A quick and spicy fettuccine stir fry with a Croatian twist, featuring crispy vegetables.
Ingredients
- β8 oz Fettuccinewide egg noodles
- β2 tbsp Vegetable oilfor stir-frying
- β1 cup Crispy fried onionsstore-bought or homemade
- β1/2 cup, sliced Spicy Croatian sausageuse vegetarian option for veggie version
- β1 cup, sliced Bell pepperany color
- β1 cup, sliced Onionthinly sliced
- β3 cloves, minced Garlicoptional
- β2 tbsp Tomato pasteor crushed tomatoes
- β1/4 cup Chopped fresh parsleyoptional garnish

Cook fettuccine according to package instructions.

In a large skillet or wok, heat vegetable oil over medium-high heat. Add spicy sausage and cook until browned, about 3-4 minutes.

Add bell pepper and onion to the skillet and cook until tender, about 4-5 minutes.

Add garlic, if using, and cook for 1 minute.

Stir in tomato paste and cook for 1-2 minutes.

Add cooked fettuccine to the skillet and toss everything together.
