Spicy Moroccan Apricot Chicken
A flavorful and aromatic chicken dish with spicy Moroccan flavors and sweet apricot notes. Serve with fluffy rice or couscous.
Ingredients

- β1/4 cup apricot jam
- β2 tbsp spicy harissa
- β1 cup fluffy basmati rice
- β1 tsp moroccan spices
- β2 tbsp olive oil
- βto taste salt
- βto taste pepper
- β1/4 cup chopped fresh cilantro
Instructions

Heat 1 tbsp of olive oil in a large skillet over medium-high heat.

Add the chicken breast and cook for 5-6 minutes per side, or until cooked through.

Transfer the chicken to a plate and cover with foil to keep warm.

Add the remaining 1 tbsp of olive oil to the skillet.

Add the moroccan spices and cook for 1 minute, stirring constantly.

Add the spicy harissa and apricot jam, and stir to combine.

Simmer the sauce for 2-3 minutes, or until heated through.
