Mexican Nduja Empanadas
A twist on traditional empanadas, filled with spicy nduja sausage and served as a delicious breakfast or snack.
Ingredients
- β6 ounces nduja sausagespicy, Italian sausage
- β1 package puff pastrythawed
- β1 medium oniondiced
- β1 teaspoon cumin
- β1/2 teaspoon chili powder
- β1/4 teaspoon salt
Instructions

Preheat oven to 400Β°F (200Β°C).

Roll out puff pastry to a thickness of 1/8 inch (3 mm).

Cut out circles of pastry using a cookie cutter or the rim of a glass.

In a pan over medium heat, cook the diced onion until softened.

Add the cooked onion to the nduja sausage and mix well.

Season the nduja mixture with cumin, chili powder, and salt.

Place a tablespoon of the nduja mixture onto one half of each pastry circle.

Brush the edges of the pastry with water and fold the other half over the filling.

Press the edges of the pastry together to seal the empanada.

Use a knife to cut a few slits in the top of each empanada to allow steam to escape.

Brush the tops of the empanadas with egg wash.

Bake the empanadas for 20-25 minutes, or until golden brown.
