Egyptian Oatmeal Fritters
A spicy twist on traditional fritters, made with oatmeal and Egyptian spices. These fritters are perfect as a snack or light breakfast.
Ingredients
- β1 cup oatmeal
- β1 tsp egyptiancumin and coriander blend
- β1/2 tsp spicycayenne pepper
- β1/2 cup juicygrated carrots
- β2 eggsbeaten
- β1/4 cup flourall-purpose flour
- β1/4 cup water

In a large bowl, whisk together oatmeal, Egyptian spice blend, spicy cayenne pepper, and a pinch of salt.

Add in grated carrots, beaten eggs, flour, and water. Mix until a thick batter forms.

Heat a non-stick pan with a small amount of oil over medium heat.

Drop the batter by spoonfuls into the pan, flattening slightly with a spatula.

Cook for 3-4 minutes or until the fritters are golden brown and crispy.

Flip the fritters and cook for an additional 2-3 minutes or until golden brown on the other side.

Serve warm with a dollop of yogurt or a side of chutney.
