Tunisian Spicy Walnut Chicken
A flavorful and spicy chicken dish from Tunisia, marinated in a blend of spices and topped with toasted walnuts.
Ingredients

- β1/4 cup walnutstoasted
- β1/2 cup spicy marinadesee below for marinade ingredients
- β2 tbsp olive oilfor frying
- β1 medium onionchopped
- β3 cloves garlicminced

In a blender or food processor, combine 2 tbsp olive oil, 2 tbsp lemon juice, 1 tsp ground cumin, 1 tsp smoked paprika, 1 tsp garlic powder, 1/2 tsp salt, and 1/4 tsp black pepper. Blend until smooth.

Place the chicken in a large ziplock bag or a shallow dish. Pour the marinade over the chicken and massage to coat. Seal the bag or cover the dish. Refrigerate for at least 2 hours or overnight.

Preheat the oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper.

Remove the chicken from the marinade, allowing any excess to drip off.

In a large skillet, heat 1 tbsp olive oil over medium-high heat. Add the chicken and cook until browned on both sides and cooked through, about 5-6 minutes per side.

Transfer the chicken to the prepared baking sheet and bake for an additional 5-7 minutes, or until cooked through.

In a small skillet, heat 1 tbsp olive oil over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes.

Add the minced garlic to the skillet and cook for an additional minute.

Stir in the toasted walnuts and cook for 1-2 minutes, or until fragrant.

To serve, slice the chicken and top with the walnut and onion mixture.
