Spicy Thai Rice Bowl
A flavorful and spicy Thai-inspired rice bowl dish with juicy chicken, crunchy vegetables and a tangy sauce.
Ingredients
- β1 cup Thai jasmine riceuncooked
- β1 pound boneless chicken breastcut into bite-sized pieces
- β2 tablespoons spicy Thai red curry paste
- β1 can coconut milkfull-fat
- β1 cup sliced carrots
- β1 cup sliced bell peppers
- β1/4 cup chopped fresh cilantro
- βto taste salt
- βto taste pepper
Instructions

Cook the Thai jasmine rice according to package instructions.

In a large skillet, heat 2 tablespoons of oil over medium-high heat.

Add the chicken to the skillet and cook until browned and cooked through, about 5-6 minutes.

Remove the chicken from the skillet and set aside.

Add the spicy Thai red curry paste to the skillet and cook for 1-2 minutes, until fragrant.

Add the coconut milk to the skillet and bring to a simmer.
