Tagine with Spring Vegetables
A flavorful and aromatic stew originating from North Africa, made with tender spring vegetables and rich Parmesan cheese.
Ingredients
- ●1 cup mixed (such as carrots, zucchini, bell peppers) spring vegetables
- ●2 tsp algerian spice mix
- ●2 tbsp olive oil
- ●1 medium onion
- ●3 cloves garlic
- ●1 tsp tagine spice mix
- ●1/4 cup grated Parmigiano-Reggiano cheese
- ●2 cups chicken or vegetable broth
Instructions

Heat the olive oil in a large clay or ceramic tagine over medium heat.

Add the onion and garlic and sauté until softened, about 5 minutes.

Add the mixed spring vegetables and cook until they start to tenderize, about 5 minutes.

Add the algerian spice mix, tagine spice mix, and broth. Stir to combine.

Bring the stew to a simmer, then reduce the heat to low and cook, covered, until the vegetables are tender, about 20 minutes.

Season with salt and pepper to taste.
