Tart Kiwifruit Panna Cotta with Herbal Crumble
A refreshing Italian dessert combining the sweetness of kiwifruit with the earthiness of an herbal crumble.
Ingredients
- β3 kiwifruit
- β1 cup heavy cream
- β1 cup tart yogurt
- β1/2 cup granulated sugar
- β1 envelope (0.25 oz) springy gelatin
- β4 cups herbal tea
- β1/4 cup all-purpose flour
- β1/2 cup cold unsalted butter
- β2 tbsp tart jam
Instructions

Steep the herbal tea in 4 cups of boiling water for 3-5 minutes.

Strain the tea and let it cool to room temperature.

In a separate bowl, sprinkle the gelatin over 1/4 cup of cold water.

In a medium saucepan, combine the heavy cream, tart yogurt, granulated sugar, and cooled herbal tea mixture.

Heat the mixture over medium heat, stirring occasionally, until the sugar has dissolved and the mixture is just simmering.

Remove the mixture from the heat and add the softened gelatin, stirring until fully dissolved.

Pour the mixture into individual serving cups or ramekins.

Refrigerate for at least 4 hours or overnight until set.

In a separate bowl, whisk together the flour, cold unsalted butter, and a pinch of salt until crumbly.
