Spring Pasta with Mediterranean Flair
A delicious and easy-to-make pasta dish inspired by the Mediterranean, featuring spring vegetables and a hint of herbs.
Ingredients
- β8 oz linguinewhole wheat or regular
- β2 spring onionsthinly sliced
- β3 cloves flavorful garlicminced
- β1/4 cup mediterranean olivespitted and sliced
- β1/4 cup winey white winedry
- β1/2 cup grated parmesan cheesefreshly grated
- β1/4 cup fresh parsleychopped

Bring a large pot of salted water to a boil and cook linguine according to package instructions.

In a large skillet, heat 2 tablespoons of olive oil over medium heat.

Add thinly sliced spring onions and cook until they start to soften, about 2-3 minutes.

Add minced garlic and cook for another minute, stirring constantly to prevent burning.

Add pitted and sliced olives and cook for 1-2 minutes, until they start to release their juices.

Add dry white wine and cook until the liquid is almost completely reduced, stirring occasionally.
