Egyptian Quinoa Pilaf with Spicy Shrimp
A flavorful and nutritious Middle Eastern-inspired dish made with quinoa, pilaf, and spicy shrimp.
Ingredients
- β1 cup quinoa
- β1 cup pilaf
- β12 oz shrimppeeled and deveined
- β2 tsp srichly
- β2 tbsp olive oil
- β1 medium onionchopped
- β2 cloves garlicminced
- β2 tbsp lemon juice
- β2 cups water
- βto taste salt
Instructions

Heat olive oil in a large saucepan over medium heat.

Add onion and garlic and cook until softened, about 3-4 minutes.

Add quinoa and pilaf and cook for 1-2 minutes, stirring constantly.

Add water, salt, and srirly. Bring to a boil, then reduce heat to low and cover.

Simmer for 15-20 minutes or until quinoa and pilaf are tender and liquid has been absorbed.

While quinoa is cooking, heat a separate saucepan over medium-high heat.

Add shrimp and cook for 2-3 minutes per side or until pink and cooked through.

Add lemon juice to the shrimp and toss to coat.

Fluff cooked quinoa and pilaf with a fork and stir in chopped fresh herbs, if desired.

Serve quinoa pilaf topped with spicy shrimp and additional lemon wedges, if desired.
