Thai Eggplant Stir Fry

- β2 medium Eggplant
- β1 medium Onion
- β3 cloves Garlic
- β2 tablespoons Vegetable oil
- β2 tablespoons Thai red curry paste
- β2 tablespoons Fish sauceOr use vegan alternative
- β1 tablespoon Brown sugar
- β2 Chili peppersoptional

Instructions

Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat.

Add the onion and garlic and stir-fry until the onion is translucent.

Add the eggplant and stir-fry for 3-4 minutes, until it starts to soften.
