Suet and Delight Thai Meatballs
Thai-inspired meatballs made with suet and delight, served with a sweet and spicy sauce. Perfect for a quick and easy dinner.
Ingredients
- β1 pound Suetfinely ground
- β1/2 cup Delightcrushed
- β2 tablespoons Thai Red Curry Paste
- β1 tablespoon Fish Sauce
- β1 tablespoon Brown Sugar
- β1 Egg
- β1/4 cup Breadcrumbs
- β1/4 cup Chopped Fresh Cilantro
- β1/4 cup Chopped Fresh Mint
- β1/4 cup Vegetable Oil

Preheat oven to 400Β°F (200Β°C).

In a large mixing bowl, combine suet, delight, curry paste, fish sauce, sugar, egg, breadcrumbs, cilantro, and mint. Mix well.

Use your hands to shape the mixture into small meatballs, about 1 1/2 inches (3.8 cm) in diameter.

Place the meatballs on a baking sheet lined with parchment paper.

Drizzle with vegetable oil and gently roll the meatballs to coat evenly.

Bake for 15-20 minutes or until lightly browned on the outside.

While the meatballs are baking, prepare the sauce by heating 2 tablespoons of oil in a small saucepan over medium heat.

Add 2 tablespoons of curry paste and cook for 1-2 minutes, stirring constantly.

Add 1 cup of water and bring to a boil.

Reduce the heat to low and simmer for 5-7 minutes or until the sauce has thickened slightly.

Remove the meatballs from the oven and carefully place them in the saucepan with the sauce.
