Thai Corn Salad
A delicious and refreshing Thai-inspired corn salad made with crispy corn, sweet red onions, and a tangy dressing.
Ingredients
- β2 cups Crispy Cornfresh or frozen, thawed
- β1 medium Sweet Red Onionthinly sliced
- β1/4 cup French Corn Salad Dressingstore-bought or homemade
- β1 tsp Thai Red Chili Flakesoptional, for some heat
- β1/4 cup Fresh Cilantrochopped, for garnish
- βto taste Salt
- β1 tsp Sugaroptional, to balance flavor
- β2 tbsp Lime Juicefreshly squeezed

1. In a large bowl, combine the crispy corn, sweet red onion, and Thai red chili flakes.

2. In a small bowl, whisk together the French corn salad dressing, lime juice, salt, and sugar.

3. Pour the dressing over the corn mixture and toss to coat.

4. Stir in chopped fresh cilantro.

5. Taste and adjust seasoning as needed.

6. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
