Middle Eastern Squash Stir Fry
A flavorful and healthy stir fry made with roasted squash, crispy vegetables, and a hint of Middle Eastern spices.

- β1 medium Butternut squash
- β1 medium Sweet potatoes
- β1/4 cup Crispy fried onions
- β1 tsp Eastern spices (cumin, coriander, turmeric)
- β2 tbsp Olive oil
- β Salt and pepper
- β1/4 cup Fresh parsley

Instructions

Preheat the oven to 400Β°F (200Β°C).

Peel and dice the butternut squash and sweet potatoes. Toss with 1 tbsp olive oil, salt, and pepper. Roast in the oven for 20 minutes.

Heat the remaining 1 tbsp olive oil in a pan over medium heat.

Add the crispy fried onions and cook for 1 minute.

Add the roasted squash and sweet potatoes to the pan. Cook for 2-3 minutes.
