Lamb Tagine with Sweet and Crispy Toppings
A hearty North African-inspired stew featuring tender lamb, sweet and crispy toppings, and an aromatic blend of spices.
Ingredients
- β1 pound lamb shouldercut into 1-inch cubes
- β2 teaspoons algerian spice blendstore-bought or homemade
- β2 medium, peeled and cubed sweet potatoesabout 2 cups
- β6-8 pieces crispy flatbreadstore-bought or homemade
- β1/4 cup, sliced green olivesabout 12 slices
- β1/4 cup, chopped fresh parsleyabout 10 sprigs
- β2 tablespoons olive oilfor cooking
- βto taste salt and pepper

Preheat oven to 300Β°F (150Β°C).

In a large Dutch oven, heat the olive oil over medium-high heat.

Add the lamb cubes and cook until browned on all sides, about 5 minutes.

Add the Algerian spice blend, sweet potatoes, and 1 cup of water to the pot.

Bring to a boil, then cover and transfer to the preheated oven.

Bake for 2-1/2 hours, or until the lamb is tender and the sweet potatoes are cooked through.

Meanwhile, toast the crispy flatbread in the oven for an additional 5 minutes, or until crispy.

To assemble, place a portion of the lamb mixture onto a plate or bowl.

Top with a few slices of green olives, some chopped parsley, and a piece of crispy flatbread.
