Crispy Sushi Mushroom Bites
A Japanese-inspired appetizer with a crunchy outside and savory mushroom filling, perfect for snacking.
Ingredients
- β1 cup sushi riceshort-grain rice
- β1 cup, finely chopped mushroomany variety
- β1/2 cup, crushed crunchyany crunchy snack, e.g. potato chips
- β2 tbsp, honey or sugar sweetoptional
- β1/4 cup, finely chopped chestnutoptional
- β1/4 cup vegetable oilfor frying

1. In a large bowl, combine sushi rice and chopped mushroom.

2. In a small bowl, mix together crushed crunchy and honey or sugar (if using).

3. Add the crunchy mixture to the rice and mushroom mixture and stir until combined.

4. If using chestnuts, add them to the mixture and stir until combined.

5. Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat.

6. Using a small cookie scoop or spoon, form the mixture into small balls and flatten slightly into patties.

7. Fry the patties in batches until golden brown and crispy, about 3-4 minutes per side.

8. Remove the patties from the oil and place on a paper towel-lined plate to drain excess oil.

9. Serve the crispy sushi mushroom bites warm or at room temperature.
