Prawn and Sweet Dumpling Empanadas
A sweet and savory empanada filling made with prawns and sweet dumplings, wrapped in a crispy mexican pastry.
Ingredients
- β1 cup Australian Prawns
- β1 cup Sweet Dumplings
- β1 package Pastry Dough
- β1/4 cup Vegetable Oil
- β1 tsp Cumin
- β1 tsp Chili Powder
- βto taste Salt
- β1/4 cup Optional: Sliced Scallions

1. Preheat the oven to 375Β°F.

2. In a pan, heat 1/4 cup of oil over medium heat. Add cumin and chili powder, and cook for 1 minute.

3. Add the prawns and cook until pink, about 3-4 minutes.

4. Add the sweet dumplings and cook until heated through.

5. Roll out the pastry dough and cut into circles.

6. Spoon the prawn and dumpling mixture onto one half of the circle, leaving a 1/2 inch border.

7. Fold the other half of the circle and press the edges to seal.

8. Brush the tops with a little water and sprinkle with salt.

9. Bake for 20-25 minutes, or until golden brown.

10. Garnish with sliced scallions, if desired.
