Ukrainian Sweet Potato Rolls
Soft and fluffy Ukrainian sweet potato rolls filled with sweet and gooey filling.
Ingredients
- β2 large Sweet potatoes
- β1 cup Warm milk
- β1/4 cup Sugar
- β1 tsp Active dry yeast
- β1 large Egg
- β4 tbsp Gooey filling
- β1/4 cup Raisins
- β2 tbsp Butter, melted
- β2 cups All-purpose flour

1. Preheat oven to 375Β°F (190Β°C).

2. Boil the sweet potatoes until tender, then mash and set aside.

3. In a large mixing bowl, combine warm milk, sugar, and yeast. Let it sit for 5 minutes.

4. Add egg and melted butter to the milk mixture. Mix well.

5. Gradually add flour to the mixture and knead for 10 minutes.

6. Add mashed sweet potatoes to the dough and knead for another 5 minutes.

7. Place the dough in a greased bowl, cover it with a damp cloth, and let it rise for 1 hour.

8. Punch down the dough and divide it into 8 equal pieces.

9. Roll out each piece into a ball and flatten it slightly.

10. Place a spoonful of gooey filling in the center of each dough piece, then fold the dough over to form a roll.

11. Place the rolls on a baking sheet lined with parchment paper, leaving 1 inch of space between each roll.

12. Brush the tops of the rolls with melted butter and bake for 18-20 minutes, or until golden brown.
