Kenyan Stir Fry
A sweet and savory Kenyan-inspired stir fry made with juicy oysters and a variety of flavors.
Ingredients
- β12 Juicy OystersFresh and raw
- β1 cup MushroomsSliced
- β2 medium Sweet PotatoesDiced
- β1 tsp Kenyan SpicesBlend of cumin, coriander, and chili powder
- β2 tbsp Olive OilFor frying
- β1/4 cup Fresh CilantroChopped, for garnish

Heat the olive oil in a large skillet over medium-high heat.

Add the sliced mushrooms and cook until they release their moisture and start to brown, about 3-4 minutes.

Add the diced sweet potatoes and cook for an additional 5 minutes, stirring occasionally.

Add the juicy oysters and cook for 2-3 minutes, until they start to release their juices.

Sprinkle the Kenyan spices over the top and stir to combine.
