Polish Chicken Stew
A hearty and comforting stew made with chicken, vegetables, and polish sausage. Perfect for a cold winter night.
Ingredients
- β1 1/2 pounds chicken breastboneless and skinless
- β1/2 pound polish sausagesuch as kielbasa
- β1 medium onionchopped
- β2 medium carrotpeeled and chopped
- β2 stalks celerychopped
- β4 cups bouillonchicken broth
- β2 cups wateroptional
- β1 medium sweet potatopeeled and chopped

1. In a large pot or Dutch oven, heat some oil over medium-high heat.

2. Add the chopped onion, carrot, and celery and cook until the vegetables are tender, about 5 minutes.

3. Add the chicken breast and cook until browned on all sides, about 5-7 minutes.

4. Add the polish sausage and cook for an additional 2-3 minutes.

5. Add the bouillon, water (if using), and chopped sweet potato to the pot.

6. Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
