Brazilian Chicken Casserole
A flavorful and spicy casserole dish with a sweet Brazilian twist, perfect for a weeknight dinner.
Ingredients
- β1.5 pounds boneless, skinless chicken breastcut into 1-inch pieces
- β1 cup sweet casserole saucehomemade or store-bought
- β1/2 pound spicy sausagesuch as chorizo or pepperoni
- β2 cups cooked Brazilian-style ricepreferably leftover
- β1 medium diced onionsauteed until translucent
- β1 medium diced bell peppersauteed until tender
- β1/4 cup chopped fresh cilantrooptional garnish

Preheat oven to 375Β°F (190Β°C).

In a large skillet, cook the spicy sausage over medium-high heat, breaking it up with a spoon as it cooks.

Add the diced onion and bell pepper to the skillet and cook until the vegetables are tender.

In a large mixing bowl, combine the cooked rice, chicken, and sweet casserole sauce.

Stir in the cooked sausage and vegetable mixture.

Transfer the mixture to a 9x13 inch baking dish and cover with aluminum foil.

Bake for 25 minutes, then remove the foil and continue baking for an additional 10-15 minutes, or until the casserole is hot and bubbly.
