Chicken Adobo Skillet
A simple and flavorful Filipino-inspired dish made with chicken, vinegar, and spices.
Ingredients
- β1 pound chicken breast
- β2 tablespoons coconut oil
- β1 medium onion
- β3 cloves garlic
- β1 tablespoon fish sauce
- β2 tablespoons vinegar
- βto taste pepper
- βto taste salt
- β2 medium sweet potatoes
- β1/4 cup fresh cilantro

Heat oil in a skillet over medium-high heat.

Add chicken and cook until browned, about 5 minutes.

Remove chicken and set aside.

Add onion and garlic to skillet and cook until softened, about 3 minutes.

Add fish sauce, vinegar, pepper, and salt to skillet and stir to combine.

Return chicken to skillet and stir to coat with sauce.

Add sweet potatoes to skillet and stir to combine.

Reduce heat to medium-low and simmer, covered, until chicken is cooked through and sweet potatoes are tender, about 15 minutes.
