Irish Lamb Stew
A hearty, comforting stew featuring tender lamb in a rich, flavorful broth. Perfect for a chilly evening.
Ingredients
- ●1.5 lbs Lamb Shouldercut into 1-inch cubes
- ●2 medium Carrotspeeled and chopped
- ●3 medium Potatoespeeled and chopped
- ●1 large Onionschopped
- ●3 cloves Garlicminced
- ●2 tsp Sweet Irish Stew Seasoningor to taste
- ●1 cup Red Wineor beef broth
- ●2 cups Wateror to desired consistency

Season the lamb with salt and pepper.

Heat oil in a large Dutch oven over medium-high heat.

Sear the lamb until browned on all sides, about 5 minutes.

Remove the lamb and set aside.

Add more oil if necessary, then sauté the onions and garlic until the onions are translucent.

Add the carrots and potatoes, and cook for 5 minutes.

Add the lamb back in, along with the stew seasoning, red wine, and water.

Bring to a boil, then reduce heat to low and simmer, covered, for 2 hours.
