Spiced Cranberry Tagine
A twist on traditional Indian cuisine, this spiced cranberry tagine combines the flavors of the Middle East with a sweet and tangy cranberry twist.
Ingredients
- β1 cup Algerian olives
- β1 cup Cranberries
- β2 tbsp Tangy apple cider vinegar
- β2 inches Crisp fresh ginger
- β2 tsp Tagine spice mix
- β2 tbsp Coconut oil
- β1 medium Onion
- β3 cloves Garlic
- β1 tsp Cinnamon
- βto taste Salt
Instructions

Heat oil in a large Dutch oven over medium heat.

Add onion and cook until softened, about 5 minutes.

Add garlic and cook for an additional minute.

Add ginger, cook for 1 minute.

Add cranberries, olives, and spice mix. Cook for 2 minutes.

Add vinegar and bring to a simmer.

Transfer to a preheated oven and bake at 300Β°F for 30 minutes.

Stir in cinnamon and salt. Serve hot over rice or with naan bread.
