Russian Bean Stew
A hearty, comforting stew originating from Russia, made with tender black beans, tangy Russian spices, and a hint of fluffy texture.
Ingredients
- β1 cup black beans, drained and rinsed
- β1 medium onion, chopped
- β2 tbsp tangy Russian pickle relish
- β1/2 cup fluffy mashed potatoes
- β1 lb stew beef, dicedoptional, omit for vegetarian option
- β1 medium carrot, peeled and sliced
- β2 stalks celery, diced
- β2 tbsp tomato paste
- β2 cups beef broth
- β1 tsp dried thyme

Heat oil in a large Dutch oven over medium-high.

Add diced beef, if using, and cook until browned, about 3-4 minutes. Remove and set aside.

Add chopped onion, carrot, and celery to the pot, cook until tender, about 5 minutes.

Add tomato paste, cook for 1-2 minutes, stirring constantly.

Add beef broth, thyme, and browned beef, if using. Stir to combine.

Add black beans, pickle relish, and mashed potatoes. Stir to combine.

Bring stew to a boil, then reduce heat to low and simmer, covered, for 20-25 minutes, or until the flavors have melded together.

Season with salt and pepper to taste.
