Tangy Ukrainian Aebleskiver Pancakes
A twist on traditional Ukrainian pancakes, these tangy aebleskiver pancakes feature aubergine and a hint of sweetness.
Ingredients
- β1 1/2 cups Fluffy all-purpose flour
- β1 cup Tangy buttermilk
- β2 Large eggs
- β1 cup Grated aubergine
- β1 tablespoon Granulated sugar
- β1/2 teaspoon Salt
- β2 tablespoons Unsalted butter, melted
- β1 cup ukrainian pancake mix (or substitute) PancakesOptional
Instructions

Preheat a non-stick pan or aebleskiver pan over medium heat.

In a large bowl, whisk together flour, sugar, and salt.

In a separate bowl, whisk together buttermilk, eggs, and melted butter.

Add the wet ingredients to the dry ingredients and stir until just combined.

Do not overmix.

Add the grated aubergine and stir to combine.

If using pancake mix, stir to combine.

Using a 1/4 cup measuring cup, scoop batter into the pan.

Cook for 2-3 minutes, until the edges are set and the surface is dry.
