Berbere Stew

- β2 tablespoons Berbere spice blend
- β1 large, chopped Onionabout 2 cups
- β3 cloves Garlicminced
- β2 medium, peeled and chopped Carrotsabout 1 cup
- β1 large, peeled and chopped Potatoabout 1 cup
- β1 tablespoon Tomato paste
- β1 can Stew tomatoes (or 2 cups chopped fresh tomatoes)
- β2 cups Vegetable broth
- β1 cup Water
- βto taste Salt
- βto taste Black pepper

1. Heat oil in a large pot over medium heat.

2. Add onion and cook until softened, about 5 minutes.
