Beef Stroganoff
A classic Russian dish featuring sautéed beef, mushrooms, and a creamy sauce served over egg noodles.
Ingredients
- ●1 pound beef stripssirloin or ribeye
- ●1 cup mushroomsbutton or cremini
- ●1 cup tangy sour cream
- ●1 cup light chicken broth
- ●8 ounces cozy egg noodles
- ●2 tablespoons stir-fry oil
- ●1 onion fry onions
- ●2 tablespoons beef broth
- ●1 teaspoon dried thyme
- ●to taste salt

Cook the egg noodles according to package instructions.

In a large skillet, heat the stir-fry oil over medium-high heat.

Add the beef and cook until browned, about 3-4 minutes.

Remove the beef from the skillet and set aside.

Add the stir-fry oil to the skillet and cook the onions until softened, about 2-3 minutes.

Add the mushrooms and cook until they release their liquid and start to brown, about 5 minutes.

Add the beef broth, thyme, salt, and cooked beef back to the skillet.

Stir in the tangy sour cream and light chicken broth.
