Egg Italian Stir Fry
A simple and quick Italian-inspired dish made with eggs and a variety of vegetables.
Ingredients

- β2 tbsp italian light stir-fry saucestore-bought or homemade
- β1 tsp italian seasoningdried herbs
- β1 bell peppersliced
- β1/2 onionsliced
- β1/2 cup mushroomsliced
Instructions

Crack the eggs into a bowl and whisk them together with a fork.

Heat 1 tablespoon of oil in a large skillet over medium heat.

Add the sliced onion and bell pepper to the skillet and cook until tender, about 3-4 minutes.

Add the sliced mushroom to the skillet and cook for an additional 2-3 minutes.

Pour the whisked eggs over the vegetables in the skillet and cook until the eggs are almost set.

Sprinkle the italian seasoning over the eggs and stir to combine.

Pour the italian light stir-fry sauce over the eggs and stir to combine.
