Keto Mexican Churros
A low-carb twist on traditional Mexican churros, made with a crispy tortilla crust and served with a side of cinnamon sugar.
Ingredients
- β6 TortillaLarge, low-carb tortillas
- β1 cup Mexican cheeseShredded, low-carb cheese
- β1 cup Almond flourFor dusting
- β1 EggBeaten for egg wash
- β2 tbsp Cinnamon sugarOptional, for dusting
- β1/2 tsp CinnamonFor dusting
- β1/4 cup Coconut oilFor frying

1. Preheat oil in a deep frying pan to 375Β°F (190Β°C).

2. Cut tortillas into strips and set aside.

3. In a bowl, mix together almond flour, cinnamon, and a pinch of salt.

4. Dip each tortilla strip into the beaten egg and then coat in the almond flour mixture.

5. Fry the coated tortilla strips in the hot oil until crispy and golden brown, about 2-3 minutes per side.

6. Remove the fried churros from the oil with a slotted spoon and place on a paper towel-lined plate to drain excess oil.

7. Dust the fried churros with cinnamon sugar, if desired.
