Thai-Style Khao Pad Stir Fry
A simple and delicious Japanese-inspired stir fry dish featuring tofu and khao. Quick to prepare and packed with flavor.
Ingredients
- β1 block TofuExtra-firm, drained, and cut into bite-sized pieces
- β1 cup KhaoShort-grain Japanese rice
- β2 tablespoons Tasty Thai Red Curry PasteStore-bought or homemade
- β1/4 cup Toasted Thai PeanutsChopped
- β1/4 cup Thai BasilChopped
- β2 tablespoons Soy SauceLow-sodium
- β2 tablespoons Vegetable OilFor stir-frying

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the tofu and cook until golden brown, about 5 minutes. Remove from the skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the curry paste and cook, stirring constantly, for 1-2 minutes.

Add the khao and stir-fry for 2-3 minutes, until lightly toasted.

Add the peanuts and stir-fry for another minute.

Return the tofu to the skillet and stir in the soy sauce. Cook for an additional 1-2 minutes.

Stir in the Thai basil and cook for 30 seconds.

Serve hot over steamed khao.
