Tart Rum Panna Cotta

- β1/2 cup Granulated sugar
- β2 tablespoons Tart puree
- β1 tablespoon Rum
- β1 teaspoon Vanilla extract
- β1 ounce Spanish tempered chocolate

In a medium saucepan, combine the heavy cream, granulated sugar, and tart puree. Heat over medium heat, stirring occasionally, until the sugar has dissolved and the mixture is hot but not boiling.

Remove the saucepan from the heat and stir in the rum and vanilla extract. Let it steep for 10 minutes, then strain the mixture through a fine-mesh sieve into a clean bowl.

Pour the mixture into small individual serving cups or ramekins. Refrigerate for at least 4 hours, or until set.

Just before serving, melt the Spanish tempered chocolate in a double boiler or in the microwave in 10-second increments, stirring between each interval until smooth.

Spoon the melted chocolate over the chilled panna cotta. Serve chilled, garnished with fresh fruit or a sprinkle of cocoa powder if desired.
