Spicy Rigatoni Pasta
A spicy Malaysian-inspired pasta dish made with rigatoni and pungent flavors.
Ingredients
- β12 oz rigatonipenne or other tubular pasta can be substituted
- β2 tsp malaysian chili pasteadjust to taste for spiciness
- β1 large onionchopped
- β2 cloves garlicminced
- β2 cups temptingchopped fresh cilantro for garnish
- β1/4 cup pastachopped fresh mint for garnish
- β2 tbsp coconut milkoptional for creaminess
- β2 tbsp olive oilfor sautΓ©ing
- βto taste saltoptional
- βto taste pepperoptional
Instructions

Bring a large pot of salted water to a boil and cook the rigatoni according to package instructions until al dente.

In a large skillet, heat the olive oil over medium heat.

Add the chopped onion and cook until translucent, about 3-4 minutes.

Add the minced garlic and cook for an additional minute.

Stir in the malaysian chili paste and cook for 1-2 minutes.

Add the cooked rigatoni to the skillet and toss with the spice mixture.

Stir in the chopped tempting (cilantro and mint).

If desired, add the coconut milk to add creaminess.

Season with salt and pepper to taste.
