Cochinita Pibil Tacos
A traditional Mexican dish featuring slow-cooked pork in a smoky chipotle sauce, served in tacos with fresh toppings.

- β4 Portobello mushroomsLarge and meaty
- β1/4 cup Cochinita pibil marinadeAvailable at most Mexican markets
- β2 tablespoons Lime juiceFreshly squeezed
- β2 Chipotle peppers in adoboCanned in adobo sauce
- β1 teaspoon CuminGround
- β1 teaspoon OreganoDried
- β3 cloves GarlicMinced
- β8 TortillasCorn
- β1/4 cup CilantroChopped
- β1 cup Sliced radishesThinly sliced

In a blender or food processor, combine marinade, lime juice, chipotle peppers, cumin, oregano, and garlic. Blend until smooth.

Add the Portobello mushrooms to the blender and blend until they're well coated with the marinade.

Heat a large skillet over medium-high heat and add the mushrooms. Cook for 3-4 minutes per side, or until they're tender and slightly charred.

Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

Assemble the tacos by placing a few slices of the mushrooms onto a tortilla, followed by a sprinkle of cilantro and a few slices of radish.
