Russian Cherry Puff Pancakes
Delicious and traditional Russian-inspired cherry-filled pancakes with a crispy puff pastry exterior.
Ingredients
- β1 cup fresh or frozen cherry
- β1 sheet frozen puff pastry, thawed puff
- β2 large eggs
- β1/2 cup sugar
- β1 tsp vanilla
- β1 cup milk
- β2 tbsp, melted butter

Preheat oven to 400Β°F (200Β°C).

Roll out puff pastry on a floured surface to a thickness of 1/8 inch.

Cut out circles of puff pastry using a cookie cutter or the rim of a glass.

In a bowl, whisk together eggs, sugar, vanilla, and milk.

Add melted butter and mix until well combined.

Place a tablespoon of cherry filling in the center of each pastry circle.

Fold the pastry in half to form a triangle or fold the edges to form a square.

Place the filled pastry on a baking sheet lined with parchment paper.

Brush the tops with a little bit of milk and sprinkle with sugar.
