Tunisian Vegetable Tagine
A flavorful and aromatic stew originating from Tunisia, made with a variety of vegetables in a rich and spicy sauce.
Ingredients
- β2 tablespoons Vegetable oil
- β1 medium, chopped Onionsabout 2 cups
- β3 cloves, minced Garlic
- β1 medium, sliced Zucchini
- β1 medium, sliced Eggplant
- β1 medium, sliced Red bell pepper
- β1 pint, halved Cherry tomatoes
- β2 teaspoons Tunisian spice blend
- βto taste Salt
- βto taste Black pepper
Instructions

Heat oil in the bottom of a large clay or ceramic tagine or Dutch oven over medium heat.

Add the onions and cook, stirring occasionally, until they are softened and lightly browned, about 8 minutes.

Add the garlic, zucchini, eggplant, and red bell pepper. Cook, stirring occasionally, until the vegetables are tender, about 10 minutes.

Add the cherry tomatoes, Tunisian spice blend, salt, and black pepper. Stir to combine.

Bring the stew to a simmer, then reduce the heat to low and cook, covered, until the flavors have melded together and the vegetables are very tender, about 20 minutes.

Taste and adjust the seasoning as needed.

Serve the tagine hot, garnished with fresh parsley or cilantro, if desired.
